Eat to Live Pop-Up Clinic

The Eat to Live Pop-Ups are more than just fresh food, it is about nourishing our community.

Redlining stripped Black communities of access to fresh, healthy food by intentionally removing Supermarkets and blocking investment in food infrastructure creating food deserts and contributing to chronic disease.

Blacklining  responds by:

  • Teaching families how to eat seasonally and nutritiously within a tight budget.

  • Providing healthy food kits that restore access to fresh ingredients.

  • Education the community on cooking methods, disease prevention and long term wellness

What you receive when you attend the

  • Onsite food preparation demonstration

  • Learn how to prepare healthy food with fruits and vegetables according to seasons

  • Understand the connection between food and health

  • Learn how to select food that support inner wellness

  • Receive free food ingredients to recreate dishes at home for you and your family. (while supplies last)

Menu: BlackBeans & Corn Salad

Ingredients:

1 can (15 oz) black beans, drained and rinsed

1½ cups of fresh corn

1 small red bell pepper, diced

1 small red onion, finely chopped

¼ cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

½ teaspoon ground cumin

Instructions:

  1. In a large bowl, combine the black beans, corn, bell pepper, and red onion

  2. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper.

  3. Pour the dressing over the bean and corn mixture.

  4. Add chopped cilantro and toss gently to combine.

  5. Serve chilled or at room temperature.

  • Participate in monthly check-ins, until completion of voucher.
